Why Kefir Makes Pancakes Fluffy
The natural acidity of kefir reacts with baking soda in the batter, helping create the small bubbles that give pancakes a lighter texture. Kefir also adds moisture, keeping the centers tender while the outside cooks to a warm golden color.

Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups plain whole-milk kefir
- 2 large eggs
- 3 tablespoons unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- Butter or neutral oil for the pan
- Berries and maple syrup for serving
Directions
- Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl.
- In another bowl, whisk the kefir, eggs, melted butter and vanilla.
- Pour the wet mixture into the dry ingredients and stir just until combined. A few small lumps are fine.
- Let the batter rest for 5–10 minutes while a skillet or griddle heats over medium heat.
- Lightly grease the pan. Add about 1/4 cup batter for each pancake.
- Cook until bubbles appear and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes.
- Serve warm with berries and maple syrup.
Tips for Best Results
- Stir the batter only until the dry ingredients are incorporated.
- Allow the mixed batter to rest for about five minutes before cooking.
- Cook over medium heat so the centers finish before the outside becomes dark.
- Flip when bubbles appear and the edges begin to look set.
Serving and Storage
Serve the pancakes immediately with berries, maple syrup or a pat of butter. Cool leftovers completely before refrigerating them in a covered container. Reheat gently in a toaster, skillet or oven.
